Donuts & Lard


Made donuts today. It was my mother-in-law’s recipe that she has made for a very long time. No offense to Krispy Kreme or Kwik Trip, but they are the best donuts ever.

I’m convinced the secret to the taste is lard. Rendered pig fat. Not vegetable oil, not peanut oil. Fat. From an animal. Mmmm, tasty.

Malcolm Gladwell did a podcast about going to McDonald’s labs and having them recreate the old French Fry recipe that used beef tallow. Many agreed it was better than the current recipe.

While I have no problem with people choosing vegetarian diets, and think I should do more of that myself, there is something about cooking things in animal fat that is delicious.

I figure some of you will judge me for this. Shrug.
